Snack Like Royalty

Go ahead.  Indulge yourself with one of these quick, healthy, and satisfying summertime snacks.  I love how cooling they feel on the way down — perfect for these sweltering days of 90-something degree heat.

Option A:  Whip out a ripe, juicy tomato from your farmers’ market, slice it thickly, and gently kiss it with a dollop of soft goat cheese from your favorite goat farm.  I’m a big fan of Anala Goat Company‘s garlic and parsley chevre.  Sprinkle with your neighbors’ chives (thanks, K!) and arrange on a plate.  Savour slowly, with extra sliced tomatoes on the side.

 

Option B: Thickly slice a sweet, local cucumber and dab some chunky guacamole on top.  Garnish with extra cilantro if you’re feeling festive.  Don’t forget additional cucumber slices on the side.

I may not love summer heat, but I do love summer produce!

    Alison,
    I love your blog! It’s interesting, informative, and very motivating. I just had fresh guacamole on cucumber slices. I wouldn’t have thought of that, but it was delicious! I made the guacamole with avacado, cilantro, some fresh squeezed orange juice, and a dash of Tony’s. Yum!

    Thank you for the encouragement! I really appreciate that. I’m so glad some of the things here are helpful.

    As for cucumbers with guacamole…I figured that one out when I was on a SUPER restricted diet last year to deal with the food allergies and candida. It turns out that cucumber slices substitute really well for chips. I use them for guacamole, hummus, black bean dip — even salsa. I’m a big fan. Of course, J still likes real chips, so I totally eat those too sometimes. But I wish I didn’t.

    I’m going to try orange juice in my guacamole next time. That’s a great idea. I’ve had avocado orange chutneys that were really good, so I can imagine it being delicious. Thanks for the tip!

    Yum! I can only have the second snack because I react to tomatoes and can’t have dairy, but both look delish! To often we turn too carbs for snacks instead of veggies, so these are great!

    Alison, I can’t comment on your splendid site and all those gorgeous looking recipes to nite because I am in a hurry – but I’m coming back tomorrow.

    I came across an answer that I needed and wanted to share it with you (you and I are both kinda new to blogging).

    Its about linking our URL to our name, so that when we are visiting around wordpress, we don’t have to input our blog name as it comes up when the cursor is passed over it. I have had a special need which I have been researching in the forum and received great help from the wonderful family we have there, but in the doing, came across this – - so per the sacredpath member: while logged in, go to users > your profile > and down to the ‘website field’, enter the full URL of your blog. Don’t forget to save. Simple really Til next time.
