I need to run off to an appointment, so I’ll make this fast.
Monday: Beef stir-fry with lots of veggies, brown rice for J (rice doesn’t agree with me)
Thursday: Smashed Lentils with Egg (new recipe, will post if good), lots of veggies
Saturday Breakfast: Homemade black refried beans (will post recipe later), scrambled eggs, stir-fried bell peppers and onions with cilantro, homemade whole wheat tortillas for J and guest
Saturday Dinner: Leftovers
Sunday: Crockpot Chicken and Quinoa (will post this awesome recipe soon)
